Our bars are a core part of the club’s atmosphere – from sun-drenched poolside drinks to relaxed afternoon rosé, lively happy hours and evening events. With multiple bars and a diverse weekly programme, our bar team shapes the rhythm of the club from morning to night.

We’re looking for an experienced and hands-on Bar Manager to oversee our bar operations for the 2026 season. You’ll bring energy, leadership, and a guest-first mindset to ensure the bar team consistently delivers the relaxed, welcoming atmosphere The Peligoni Club is known for.

This is a dynamic, fast-paced, guest-facing role suited to an ambitious hospitality professional who loves developing a team, enjoys creating memorable drinks experiences, and thrives in a seasonal environment where no two days are alike. You will inspire your team, drive quality, support club events, and help create the kind of holiday moments our guests return for year after year.

Key Responsibilities

  • Oversee the day-to-day running of all bar operations, ensuring consistently high service standards.
  • Train, develop, and motivate the bar team throughout the season.
  • Deliver clear briefings before every service and event.
  • Brief staff before every service and event, ensuring expectations and standards are clear.
  • Work closely with the Events and F&B teams on weekly events, weddings and special event weeks.
  • Ensure all drinks meet Peligoni standards — consistent, efficient, beautifully presented.
  • Maintain excellent hygiene and organisation across all bar areas.
  • Manage stock levels, rotation, ordering, and waste control.
  • Respond to guest queries professionally, and with a guest-first mindset.
  • Support restaurant teams during meal services.
  • Manage rota planning with awareness of peaks and labour costs.
  • Help plan bar promotions to elevate guest experience and increase sales.
  • Act as a club keyholder when required, including closing responsibilities.

Essential Requirements

  • Proven leadership experience in a high-volume bar or restaurant.
  • Strong cocktail, spirits, wine, and beer knowledge.
  • Experience training and developing teams.
  • Excellent interpersonal skills and a guest-first mindset.
  • Highly organised, proactive, and adaptable.
  • Understanding of EPOS operating systems.
  • Creative flair for cocktail design.
  • Basic Food Hygiene Certificate (required).
  • First Aid Certificate (desirable).
  • WSET Level 2 or 3 (desirable).
